Greens Pie
This nourishing and flavorful Greens Pie is packed with fresh herbs, creamy feta, and delicate layers of filo pastry. Perfect for a light meal or side dish, it's a simple yet satisfying way to enjoy seasonal greens.
Ingredients:
- 1 leek, diced 
- 1 zucchini, diced 
- 2 cloves garlic, minced 
- 1 bunch English spinach, chopped 
- Handful of fresh mint, chopped 
- Handful of fresh dill, chopped 
- 250g feta, crumbled 
- 1 egg, whisked 
- Filo pastry 
- Sesame seeds 
- Olive oil 
- Salt & pepper, to taste 
- Melted butter for brushing 
Method:
- Heat a pan over medium heat with a drizzle of olive oil. Sauté the leek, zucchini, and garlic until softened. Add the spinach and cook until wilted and no liquid remains. Transfer to a bowl and let it cool. 
- In a large bowl, whisk the egg, then add crumbled feta, mint, and dill. Season with salt and pepper. 
- Once cooled, mix the spinach mixture into the feta mixture until well combined. 
- Layer 4–5 sheets of filo pastry in a baking tray, lightly brushing each with melted butter. Spread the greens mixture evenly on top. Cover with another 6 sheets of filo, brushing each layer with butter. 
- Sprinkle sesame seeds on top and bake at 200°C for 25 minutes or until golden and crispy. 
- Slice and serve warm. Enjoy!
